Food & Beverage Director

About the role

The Food and Beverage Director provides overall leadership and management of the dining operations in the community, reporting directly to the Executive Director. Responsibilities include procurement, food and dining preparation and service, financial and budgetary management, labor costs, staff supervision and training, food safety, sanitation, inventory, regulatory compliance, and adherence to the Phoenix designated menu program.

Responsibilities

• Refer to the Resident Profile and diet orders for every new resident.
• Recognize resident changes in condition and take appropriate action.
• Conduct routine cooking demonstrations in accordance with Phoenix’s philosophy of incorporating all elements of wellness into resident care and services.
• Assist the Community Engagement Director and Executive Director in communicating with prospective residents and family members about Phoenix’s philosophy regarding personalized services and wellness.
• Partner with the Community Engagement Director and POC to create menus for professional and community events.
• Complete production sheets one week prior to service.
• Utilize production worksheets to control the quality of foods prepared and completed prior to placing food orders for the next week.
• Adhere to menus and recipes as outlined in the Phoenix Menu Program.
• Ensure all food in the Bistro and other common areas is fresh, covered, labeled, and dated as applicable.
• Ensure all meals are prepared to Phoenix standards and served on time.

Requirements

• Graduate of a culinary institute is preferred.
• Current Food Services Sanitation Certificate.
• Knowledge of nutrition and therapeutic diets.
• 2–3 years’ experience as a chef/cook.
• Demonstrated leadership capabilities and ability to direct the work of others.
• Knowledge and experience in the Assisted Living industry preferred.
