Executive Steward - Santa Fe

About the role

Oversee compliance with Board of Health and OSHA standards, manage team performance, and ensure adherence to Station Casinos’ policies and procedures. Act as the lead in the absence of the Executive Steward, setting schedules, assigning duties, and maintaining proper staffing levels.

Responsibilities

• Maintain knowledge of MSDS booklet location and contents, ensuring team members are trained on its materials.
• Display and communicate emergency procedures to all team members.
• Address and resolve team member or guest concerns.
• Evaluate and oversee team member job performance, including coaching, counseling, and disciplinary actions as needed.
• Set schedules, assign job duties, and manage team member hours to meet service standards.
• Foster teamwork and collaboration within the department and with peers.
• Maintain accurate team member records, including time, attendance, and corrective counseling.
• Ensure all team members are knowledgeable of and adhere to Station Casinos’ policies and standards.
• Conduct ongoing group and individual training on policies, procedures, chemical usage, and proper ware-washing techniques.
• Set and communicate daily, weekly, and monthly goals, leading the team to achieve desired results.
• Maintain consistent communication with all managers regarding department activities.
• Ensure managers conduct daily team huddles and maintain communication boards for pertinent information.
• Participate in the creation of annual budgets and manage forecasting and cost controls to meet financial goals.
• Oversee department operations to ensure adherence to Station Casinos’ specifications, standards, and guidelines for requisitioning, production, fabrication, and quality.
• Work closely with the management team to ensure products comply with specifications and cost controls.
• Maintain proper storage of china, glassware, silverware, and pan-ware.
• Uphold cleanliness and sanitation standards in compliance with department policies, Department of Health, and OSHA regulations.
• Ensure kitchens and equipment are in good working order to maintain a clean, hazard-free work environment.
• Monitor and document areas below standards, collaborating with facilities, culinary, and sanitation departments to address issues.
• Ensure the department operates within HACCP guidelines and complies with a safe, hazard-free work environment.

Requirements

• Ability to communicate effectively with guests, team members, and management.
• Strong time management skills with minimal supervision.
• Flexibility to handle a variable schedule.
• Sound judgment and maturity in decision-making, even in difficult situations.
• Great attention to detail to maintain unit appearance and operating standards.
• Minimum 1 to 3 years of food and beverage or culinary experience in related fields (preferred).
• Minimum 3 years of experience in a high-volume dining environment with P&L responsibilities (preferred).
• Comprehensive knowledge of Health Department, OSHA, Fire Department, and Station Casinos’ regulations.
• Basic understanding of profit and loss statements, cost control, budgeting, training, inventory control, and sanitation.
• Basic computer skills in POS systems, Microsoft Office, and requisitioning.
• Ability to work hands-on in any kitchen environment, including high-volume production, chemical usage, sanitation techniques, and ware-washing procedures.
