Executive Sous Chef

Key Responsibilities

  • Work with all culinary and F&B leaders to create exemplary culinary standards and an environment of continual improvement.
  • Hire and train staff to prepare and execute all food production for all club outlets.
  • Create and follow departmental budgets to minimize labor, operational, and food costs.
  • Schedule working hours of all kitchen employees, considering business volume while conserving labor costs.
  • Continually strive to raise the standards of food quality and sanitation.
  • Develop standardized recipes, signature items, and portion control.
  • Implement and monitor food tracking systems.
  • Plan menus that creatively enhance dining outlets and cater to members' needs.
  • Aid in the planning of special events and catering projects, ensuring smooth execution by line staff.
  • Evaluate job performance of kitchen staff, correcting, rewarding, or disciplining fairly and legally.
  • Submit regularly for review the weekly and end of the month reports.
  • Motivate a team who can maintain and clean kitchen equipment, all areas of food service, and be cross-trained for full utilization and development.
  • Ensure high-level food safety management, including HACCP and local food safety regulations.
  • Adhere to safety, health, security, and loss control policies and procedures, as well as government legislation.
  • Perform other duties as assigned.

Qualifications

  • Culinary Degree or equivalent experience.
  • Seven to ten years of culinary experience in large world-class resorts, hotels, and clubs.
  • Prior culinary leadership experience in high-end restaurants, resorts, or private clubs preferred.
  • Complete knowledge and understanding of all cookery techniques and processes.
  • Thorough knowledge of F&B operational requirements.
  • Thorough knowledge of all food products - local and imported.
  • Experience sourcing local ingredients and creating menu items based on seasonal ingredients.
  • Comprehensive understanding of all occupational health and safety issues.

Additional Requirements

  • Able to work flexible work hours, including evenings, weekends, and holidays.
  • Shifts longer than eight hours may be required due to business demands.
  • Positive attitude, professional demeanor, and exceptional communication and interpersonal skills.
  • Able to work in a team environment and stay calm and focused during busy times.
  • Able to read, write, speak, and understand English; additional languages preferred.
  • Able to perform physical tasks such as standing, walking, and moving for extended periods, lifting up to fifty pounds.
  • Flexibility and ability to adapt to new projects.
  • A desire to work in a fast-paced environment.
