Executive Chef - New Hotel Opening

About the role

We are seeking an exceptional Executive Chef to help build and lead the culinary program for a new hotel opening late 2026. The hotel, currently named Eddy Redondo Beach, will be launched as part of a major soft brand collection.

Responsibilities

  • Lead all culinary operations across three distinct outlets, ensuring exceptional food quality, consistency, and presentation.
  • Develop menus, nightly specials, and seasonal offerings while maintaining tight food and labor cost controls.
  • Build, hire, train, and mentor high-performing kitchen teams across all outlets and banquet operations.
  • Champion cross-utilization of premium ingredients to maximize efficiency and profitability.
  • Oversee purchasing, vendor relationships, and inventory management.
  • Partner with banquet operations—whether you bring strong events experience yourself or build a team around those strengths.
  • Maintain the highest standards of food safety, sanitation, and health compliance.
  • Collaborate closely with hotel leadership to drive the overall guest experience and property success.
  • Participate in pre-opening planning, concept refinement, and kitchen build-out.

Requirements

  • Leader with a proven track record of running multi-outlet or complex culinary operations.
  • Well-rounded culinary background that includes some foundation in classical or French-influenced technique.
  • Natural fit for coastal and seafood-forward cuisine - you think in composed dishes, not just center-of-plate proteins.
  • Comfort in high-volume, fast-paced environments without sacrificing quality.
  • Established local presence or professional reputation in the Southern California market is a plus.

Qualifications

  • High school diploma or equivalent required; culinary degree or formal training a strong plus.
  • Alcohol Awareness and Food Handler Certification (as required by state).
  • Ability to work long hours on your feet and lift up to 50 pounds.
  • Ability to work flexible hours including nights, weekends, and holidays.

Skills

  • Strong leadership and management skills.
  • Excellent communication and interpersonal skills.
  • Proven ability to develop and execute successful menu concepts.
  • Experience with budgeting and cost control.
  • Knowledge of food safety and sanitation regulations.

Pay

$130,000 - $140,000 / year
