Executive Chef Employee Dining Room - MGM National Harbor
About the role
MGM National Harbor is seeking an Executive Chef to lead our high-volume Employee Dining Room (EDR) operations. In this critical leadership role, you will own the daily culinary operations, drive fiscal and labor productivity, and design menu strategies that sustain our world-class workforce. This role is ideal for a culinary leader who thrives in high-volume, fast-paced environments and takes pride in fueling the team behind the magic.
Responsibilities
- Own, lead, and oversee daily commissary kitchen operations, fiscal budgets, labor productivity, scheduling, inventory control, guest service standards, and execution and development of menu strategies to produce both short-term and long-term profitability.
- Execute policies, operating procedures, pricing initiatives, training programs, directives, menus, rules, and regulations for the commissary staff.
- Maintain the highest standards of health, sanitation, and cleanliness within all areas of the kitchens.
- Manage Human Resources responsibilities for commissary kitchens, including creating a work environment that promotes teamwork, performance feedback (coaching and counseling), recognition, mutual respect, and employee satisfaction; quality hiring, training, and succession planning process that encompass the company’s diversity commitment.
- Interact with guests to ensure satisfaction and product quality.
- Review BEOs, SEOs, and MEOs daily to ensure orders are executed upon; react to guest complaints and take appropriate action.
- Collaborate with divisional Directors, Executive Chefs, and kitchen team to ensure seamless execution of product delivery between kitchens, including time standards, recipe specifications, and quality.
Requirements
- Three years of prior relevant experience.
- Previous experience managing employees under a collective bargaining agreement preferred.
- Ability to work a varied shift to include weekends, holidays, and evenings.

Pay
The pay range for this role is $85,400.00 - $113,900.00. This range represents a good faith estimate of the salary range that MGM reasonably expects to pay for the position upon hire. The actual salary offer will take into account a wide range of factors, including location. This position is eligible to participate in the Company’s incentive plan.
