About the Role
The Executive Chef reports to the General Manager/Chef Director and is responsible for developing and executing culinary results to exceed customer expectations within a Senior Living Community. This role oversees culinary and financial operations, ensuring service, production, and presentation standards are met. The Executive Chef manages food preparation, final presentation, client relationship management, and hourly staff development.
Responsibilities
- Culinary:
- Manage menu writing and cost control using recipes and costing measures.
- Ensure quality of all food products and adherence to standards.
- Oversee food production, execution, and presentation.
- Manage all aspects of catering operations.
- Operations:
- Maintain vendor partner relationships.
- Purchase food and supplies, ensuring quality control in receiving.
- Determine production schedules and staff requirements for timely service delivery.
- Ensure compliance with safety, food handling, sanitation, and uniform standards.
- Manage client relationships for satisfaction and account retention.
- Financial:
- Manage department expenses (P&L) including food costs, labor, supplies, uniforms, and equipment.
- Analyze recipes to assign prices to menu items based on costs.
- Responsible for inventory management.
- Submit financial reporting to the corporate office.
- People:
- Manage staff recruitment, hiring, termination, reviews, and unit management.
- Train and supervise cooks and staff in food preparation, cooking, garnishing, and presentation.
- Provide excellent customer service, ensuring attentiveness and approachability.
Requirements
- High School diploma or equivalent.
- 3-5 years of experience in food service management, specifically in corporate dining.
- ServSafe Certification.
- Allergen Awareness Certification.
Qualifications
- Culinary School degree or certificate (preferred).
- Proficiency in Microsoft Office Suite.
- Past experience within Senior Living (a plus).
