About the role
The Steward is responsible for general sanitation and cleaning of all back-of-house areas, upholding Virginia Department of Health cleanliness and sanitation standards. This role involves maintaining the dish machine, sanitation tools, and cleanliness of culinary areas.
Responsibilities
- Thorough cleaning of all plates, utensils, and kitchen tools.
- Deep cleaning and organization projects as needed or delegated by management.
- Proper scrubbing and storing of all pots and pans.
- Upkeep and cleaning of the employee dining area.
- Daily sweeping and mopping of kitchen floors, before and after service, and as directed.
- Cleaning of all floor drains and catches.
- Assisting with polishing of service ware as needed.
- Organization of all storage areas for non-food items and cleaning supplies.
- Communicate when cleaning supplies run low.
- Pressure washing of floors as directed.
- Proper cleaning and maintenance of the dish machine.
- Stocking and maintaining hand soap and hand towel stations.
- Assisting with other cleaning and maintenance projects as prescribed by culinary management.
- Polishing of copper service ware as needed.
- Other duties, as assigned.
Requirements
- Ability to work nights and weekends.
- Access to a reliable mode of transportation.
- Capable of following direction and completing tasks in a timely manner.
- Self-motivated to work diligently and at speed, particularly during service.
- A positive attitude and strong team player.
- Desire to work quickly and efficiently.
Qualifications
- Desirable: Minimum of one year stewarding experience in a food establishment.
- Desirable: Bilingual in Spanish and English.
Skills
- Ability to be thorough and pay attention to detail when cleaning.
- Cautious and delicate when handling china and glassware.
- Desire to work quickly and efficiently.
- Capable of following direction and completing tasks in a timely manner.
- Self-motivated to work diligently, particularly during dinner service.

Physical Demands
- Ability to lift 50 lbs.
- Ability to stand for long periods of time (8-10 hours consistently).
- Requires exposure to hot pans, sharp knives, open flames, and temperatures ranging from hot to cold.
- Availability and understanding that the position often requires hours in excess of a standard workweek (40-50 hours).
