Dietician

Job Summary

This position is located at the University of Oklahoma. This position supports Levy at the University of Oklahoma Training Table and works closely with university Nutrition and student athletes.

Essential Duties and Responsibilities

• Nutrition Operations Assistant:
  • Conduct final quality assurance reviews of chef submitted menus to ensure accuracy, nutritional standards, allergen information, labeling, and compliance with OU Sports Nutrition and Training Table guidelines prior to publication.
  • Attendance at Training Table Meals to serve as meal-time dietician and resource for players' nutritional needs.
  • Provide service staff in-service training in conjunction with OU Sports Nutrition Staff on topics such as labeling, allergens, cross-contamination and other food safety and/or nutrition items.
  • Avoidance of front of house (FOH) service activities including set-up, line maintenance, meal change-oversee, and closing functions.
  • Collaborate with Executive Chef and FOH Team Lead on daily team huddle topics, food presentations, action station inclusions and overall flow of service lines.
  • Aid in operation, updates, maintenance and training of OU Training Table software and technologies (Red Card, TeamWorks).
• Build, edit and maintain batch event orders under direction of Levy Director and Executive Chef.
• Aid OU dieticians with nutrition operations including but not limited to: acquiring and setting up of local vendors, fueling station logistics and game day/practice operations.
