About the role
The Dietary Services Manager assists in preparing food in accordance with the approved menu, current standards, guidelines, and regulations.
Responsibilities
- Report to work on time every day as scheduled and ready to carry out duties
- React to changes in schedules in a productive manner
- Identify and report safety hazards, and take corrective measures to eliminate them
- Prepare and serve meals at 8 am, Noon, and 5 PM (times subject to change)
- Follow written menus and make menu suggestions, using all food groups
- Store leftovers properly, covering, labeling, and dating them
- Know and follow state and local food service regulations, including temperature control and food handling
- Maintain a clean and safe kitchen environment, following proper cleaning procedures
- Make mealtimes enjoyable by being attentive to the needs of the residents, treating them with kindness
- Procure food and non-food supply items within budget, maintaining accurate inventory and minimizing waste
- Hire, train, and manage culinary staff, providing guidance and support
- Act as liaison between culinary staff and management, and support facility events and marketing ventures
Requirements
- Ability to stand and walk short distances most of the working day
- Ability to stoop, reach, and lift kitchen equipment and supplies
- Ability to handle and manipulate equipment, and taste and smell food to determine its quality
- Ability to relate to and work with ill, disabled, elderly, emotionally upset, and hostile people
- Ability to lift, push, pull, and move equipment and supplies in excess of 50 lbs
- Ability to assist in the evacuation of residents
Qualifications
- Compassion and a desire to meet the nutritional needs of the frail elderly
- General knowledge of basic food groups and ability to read and follow a recipe
- Knowledge of food preparation, sanitation, and hygienic methods
- Ability to cook a variety of foods, and knowledge of low sodium, low cholesterol, and ADA diets
- Ability to work cooperatively with staff, residents, and families, and to handle complaints graciously
- Honesty and trustworthiness

Including, but not limited to: electric oven, flat ceramic cook top, convection oven, dishwashers, sanitizer, and cooking utensils.
