About the Role
Manages food operations of the facility for all residents, including the management of food service personnel, food supplies, kitchen equipment, food production, and routine nutritional aspects of the food services. Ensures proper documentation of weights, intakes, and dietary resident issues. Utilizes the services of a clinical dietician to assist in managing the dietary department and ensures compliance with all state, federal, and local regulations. Conducts in-servicing for dietary personnel, facility personnel, and monthly scheduling.
Responsibilities
- Meets new residents and families to gather individual dietary information.
- Keeps resident dietary records up to date by attending care conferences and visiting residents regularly.
- Formulates menus and supervises food preparation and serving to residents.
- Determines basic diets in conformance with dietary essentials, considering food availability, seasonality, area preferences, and cost-efficiency.
- Adjusts meal quantity and content to meet the nutritional requirements of various residents.
- Inspects food for quantity, quality, temperature, and appearance before serving.
- Makes periodic visits with the Director of Nursing (DON) to assess food acceptability.
- Evaluates leftover food to determine resident preferences.
- Inspects incoming food, supplies, and equipment to ensure they meet specifications.
- Maintains records and compiles reports on technical and administrative operations, such as meals served, menus, diet analysis, food costs, and inventory.
- Suggests procedural revisions or adaptations to improve unit efficiency and employee training.
- Charts dietary changes for residents discussed in care conferences or those with altered dietary patterns.
Requirements
- Dietary Manager’s Certificate. If not certified upon hire, must enroll in a course within 90 days and complete it within 18 months of hire.
- 2 years of food supervision in long-term care preferred but not required.
- Computer experience is a plus.
- Strong leadership and communication skills.
Pay
Wage dependent on experience.
