Responsibilities
- Organize and coordinate department personnel, work and food production
- Numerical ability necessary to make various computations in planning departmental objectives, keeping work records and schedules, preparing budgets, requisitioning supplies, and monitoring inventory control
- Able and willing to work flexible hours in order to supervise a.m. and p.m. personnel
- Stands and walks intermittently throughout the working day
- Reaches, stoops, bends, lifts, carries, and manipulates various foodstuffs, dietary supplies and equipment
- Monitor food temperatures, portion control palatability and attractiveness of food
- Inspect special diet trays for conformance to physician’s diet orders prior to delivery
- Supervise and/or assist in workflow and food handling techniques of staff through-out meal preparation and service
- Aid in the planning and implementing of cycle menus
- Aid in the development and maintenance of a correct file of recipes for all diets
- Interview, hire, orient and supervise assigned staff
- Counsel assigned employees on infractions of established rules
- Conduct performance evaluations and approve established wage changes of assigned personnel
- Develop, implement and maintain work routines and special events staffing schedules
- Sample food to ensure it is prepared according to recipe
- Plan, conduct or arrange for food service staff development/inservice training programs
- Maintain program documentation
- Complete departmental time sheets
- Attend all staff meetings and in-service programs as scheduled; represent Dietary Department on various committees
- Participate in Department Budgeting and Planning Processes
- Review and revise department policies and procedures as needed
- Understand and comply with all policies that apply to the functioning of the department
- Conduct departmental service and storage inspections on a regular basis to ensure compliance with state and federal regulations, insurance requirements and facility standards
- Conduct quality control inspections of departmental work to ensure compliance with state and federal regulations, and facility standards
- Participate in local, state, federal, and insurance inspections
- Maintain supply usage, price and quality of products
- Requisition department supplies and equipment
- Inspect deliveries and invoices for accuracy
- Follow established procedures during drills and actual emergencies
- Computer printout of tray cards of each meal
- Complete tray card audit against physician’s diet orders
Qualifications
- Completion of state-approved food service management course, or presently enrolled in a program
- Vocal and written abilities necessary to communicate and work effectively with various levels of staff, residents, family members and the public, and for required written documentation or reports
