About the role

The Dietary Cook is responsible for ensuring each resident receives a nutritious and appetizing meal as ordered by the physician. Food must be handled safely to prevent harmful bacteria, prepared according to recipes, and served in proper amounts and at proper temperatures. The Dietary Cook ensures efficient food production and quality control under the supervision of the Director of Nutrition and Food Services.

Responsibilities

• Prepare meals and serve using portion control directives.
• Ensure all foods are pulled and thawed in proper time and stored correctly.
• Check menus and complete any pre-preparation required.
• Review daily menus and production sheet with the Director of Nutrition and Food Services.
• Safely operate equipment, ensuring it is properly cleaned and sanitized after each use.
• Report equipment problems as per community policy.
• Take and document temperatures of foods for each meal.
• Check and document daily temperatures of cooler/freezer.
• Record meal substitutions, if applicable.
• Maintain and document a cleaning schedule to ensure proper cleaning is completed daily.
• Label and date foods, rotating stock properly.
• Maintain effective communication with residents, families, and community staff.
• Ensure all foods are properly garnished for each meal.
• Check foods in for accuracy and proper storage.
• Straighten coolers and freezer, maintaining perpetual inventory.
• Assist with monthly inventories.
• Participate in the departmental quality assurance program.

Requirements

• High school diploma or equivalent.
• Six months of experience in large quantity food preparation preferred.
• Must be at least 18 years of age or older.
