Dietary Cook

Essential Functions

• Determine types and quantities of meats, vegetables, and soups to be prepared by reviewing planned menus and are timely.
• Determine the amount of foods needed to meet weekly menus and submit order to Dietary Manager.
• Absorb shortages or discrepancies in perpetual supplies inventory and notify the Dietary Manager.
• Consult with the Dietary Manager regarding the use of leftovers, stores, and labels accordingly.
• Consult a registered dietitian on modified diets.
• Supervise dietary workers when washing, trimming, or preparing food.
• Assist in training, orientation, and supervision of newly hired dietary staff.
• Measure and mix ingredients according to approved recipes, using blenders, mixers, grinders, slicers, etc.
• Cook meat, fish, and fowl in a variety of ways such as: baking, roasting, broiling, and steaming as well as carving into individual servings according to menu combinations and resident diet orders.
• Test food temperatures.
• Prepare special nourishment and supplements as instructed by the Dietary Manager, and identify with resident name and room number.
• Always observe infection prevention and control practices.
• Maintain a clean and organized kitchen.
• Perform all aspects of resident care in an environment that optimizes resident safety and reduces the likelihood of medical/healthcare errors.
• Perform all other tasks and duties as assigned.

Qualifications

• A high school diploma or general equivalency is preferred.
• One year of experience is preferred.
