About the role
The Culinary Supervisor reports to the Concessions Chef and coordinates the day-to-day operations of assigned kitchens.
Responsibilities
- Follow Executive Chef and/or Sous Chef assignments for opening/closing procedures and food preparation.
- Report daily progress and needs to Chefs.
- Lead a team to exceed guest expectations daily.
- Perform daily uniform checks with staff and help maintain kitchen standards.
- Ensure staff prepare food items according to portion size, quality standards, and departmental policies.
- Maintain HACCP standards for food quality, temperatures, product rotation, cleanliness, and sanitation.
- Maintain cleanliness of kitchen, including walk-in coolers, dry storage, shelves, walls, floors, and drains.
- Ensure all food preparation equipment is clean, sanitized, and in safe, operable condition; report issues to Chefs.
- Identify and store meats, poultry, seafood, pasta, starches, dairy, and other food items according to standards.
- Participate in monthly inventory for the department.
- Act as a team player in preparation, service, and product delivery.
- Adhere to Legends Uniform and Grooming guidelines.
- Perform other duties as assigned.
Requirements
- Professional training through a culinary education or experience in a fast-paced, high-volume fine dining restaurant/catering facility (full-service casual dining preferred).
- Extensive knowledge of food and beverage menus, specials, and services offered.
- Must obtain food safety certification.
- Ability to multi-task in a fast-paced, team-oriented setting.
- Ability to read, speak, and write in English.
- Sufficient mobility to perform tasks including constant reaching, bending, stooping, wiping, pushing, and pulling for extended periods.
- Ability to lift, push, or pull approximately 50 lbs.
- Must be able to stand or walk for long periods.
- Must be available for all Stadium events.
- Must be able to work extended hours, including late nights, weekends, and holidays.
- Practice safe work habits and follow all safety policies and procedures.
