Responsibilities
- Manage the dietary department budget including food cost and labor expenses.
- Maintain food/supply inventory usage, price, and quality.
- Plan and implement cycle menus, recipes, with modified diets and extensions.
- Monitor, audit food temperatures, portion control, palatability, and attractiveness of food.
- Sample prepared meals and inspect diet trays for conformance to physician’s diet orders.
- Supervise and/or assist in the workflow and sanitary food handling techniques of staff.
- Coordinate dietary services functions in cooperation with other departments for traditional community celebrations, activities, or special events.
- Interview, hire, orient, and supervise staff.
- Counsel employees as needed and conduct performance evaluations.
- Develop, implement, and maintain work routines and staff development/in-service training programs.
- Review and revise department job descriptions, cleaning schedules, and work routines for all positions.
- Instruct staff on various federal, state, and community regulations, policies, and procedures and monitor compliance.
- Understand and communicate OSHA requirements for employee safety in the food production area.
- Understand community’s fire and disaster plans and follow established procedures during drills and actual emergencies.
- Follow defined safety codes and infection control procedures while performing all duties.
- Conduct initial dietary interviews to assess resident food preferences.
- Obtain food preferences, diet orders/changes, and note on tray cards.
- Communicate effectively with nursing and the consulting Registered Dietician.
- Assist with developing and maintaining the Care Plan with the interdisciplinary care plan team.
- Monitor weights and nutritional status of residents.
- Develop and maintain good communication with residents and their families; respond positively to complaints about meals.
- Complete on-going audits in the department.
- Prepare QAPI reports and attend meetings.
Qualifications
The ideal candidate will possess a Certified Dietary Manager (CDM) certification and a Bachelor's degree in Nutrition, Food Service Management, or a related field. A minimum of 5 years of experience in a similar role, including experience in long-term care, is required. Strong leadership skills, excellent communication abilities, and the ability to manage a diverse team are essential. Proficiency in Microsoft Office and familiarity with dietary software are preferred.
