Responsibilities

• Teach inmates food preparation, production, service, baking, and safe use of kitchen tools and equipment
• Inspect kitchen areas, equipment, and food items to ensure compliance with safety and sanitation standards
• Review census and menu data, adjust recipes, recycle leftovers, and oversee storage of food and supplies using first-in, first-out procedures
• Plan and review work assignments, complete evaluations, maintain records, and ensure care, custody, and control of inmates
• Requisition supplies, maintain inventory, and perform related duties to support daily food service functions

Qualifications

• Two years of experience in food preparation, production, or service of a variety of complete meal menus in an institutional food service operation, food catering service, restaurant, or in a similar large-scale food production operation; or an equivalent combination of experience and training
• Successful completion of basic training in Elizabethtown, PA is required
• Must pass a background investigation and meet Criminal Justice Information Services (CJIS) compliance requirements
