About the Role

Plans, prepares, cooks, and serves nutritional meals and snacks in accordance with established guidelines and schedules. Ensures all meals are prepared and served in a safe and presentable manner. Cleans kitchen facilities, equipment, and appliances. Maintains inventory of kitchen supplies and food in a neat and orderly manner. Assigns, instructs, and monitors work of any volunteers.

Responsibilities

  • Follow all Site and Food Service Accreditation Standards.
  • Prepare food ensuring enough is made based on the number of people to be served and in a timely manner as scheduled.
  • Prepare and cook food as the menu indicates, utilizing frying, boiling, broiling, steaming, roasting of meat, poultry, seafood, fish, vegetables, salads, soups, and gravies.
  • Clean, cook, and prepare a variety of foods and beverages using kitchen equipment, utensils, and supplies in accordance with acceptable and economical cooking methods.
  • Wash, peel, and prepare foods; bake breads, pastries, muffins, etc.
  • Serve food and beverages in a presentable manner; prepare snacks and plates of food for people eating after normal serving hours.
  • Assign, instruct, and monitor work of Kitchen Assistant; ensure meals are prepared as planned.
  • Maintain a high degree of cleanliness in the kitchen and dining room; ensure all meals are prepared safely and kitchen personnel practice proper personal hygiene; ensure compliance with health regulations.
  • Assist in routine sanitation of the kitchen and related equipment, including cleaning and maintaining all food-preparation and storage areas.
  • Supervise the cleaning of serving and dining room dishes; keep the kitchen clean and orderly, including cleaning stoves, oven, and grill after each meal.
  • Work with Kitchen Manager to maintain proper inventory; order, receive, and process food purchases; verify invoice accuracy and submit for further processing.
  • Store, refrigerate, and freeze foods safely and economically; monitor expiration dates and ensure proper disposal of expired food.
  • Store food and leftovers at proper temperature; provide the Kitchen Manager with a list of items and amounts used for each meal.
  • Supervise volunteers assisting in preparing and serving meals and cleaning kitchen equipment.

Requirements

  • Three years’ experience cooking food for large groups, with some experience coordinating the work of other kitchen staff preferred, or any equivalent combination of training and experience which provides the required knowledge, skills, and abilities.
  • Safe Food Certification.

Physical Requirements

  • Endurance including climbing, standing, some bending, stooping, and stretching.
  • Eye-hand coordination and manual dexterity to manipulate cooking equipment and activities.
  • Normal range of hearing and eyesight to record, prepare, and communicate appropriately.
  • Ability to lift up to 50 lbs. or more.
