Job Functions
- Aid other bartenders in managing the bar’s operations during shifts.
- Fully execute Food and Beverage Safety and Sanitation (HACCP) policies.
Preparation and Cooking
- Prepare ingredients for cooking.
- Set up workstations with necessary ingredients and cooking equipment.
- Cook food using various utensils and grills.
- Stir and turn food while cooking to ensure great presentation.
- Check food quality and order replacements if needed.
- Maintain stock levels and report shortages to the Restaurant Manager.
- Ensure kitchen units are well-maintained and equipment is in perfect condition.
- Arrange for maintenance and repairs of kitchen equipment.
Service and Communication
- Communicate with the beverage manager/wine director, restaurant manager, banquet captain, servers, and host/hostess to enhance the guest experience.
- Maintain a steady pace of service and ensure quality and details are maintained daily.
- Maintain knowledge of and ensure staff compliance with departmental and Harwood International policies and procedures.
Procurement and Deliveries
- Check and order supplies of food items.
- Verify the quality of deliveries and documentation.
- Ensure correct storage of supplies.
- Inspect the cleanliness of the kitchen area and address any deficiencies.
- Oversee stewards to review equipment needs, cleaning schedules, project statuses, health/safety, and sanitation follow-ups.
Sanitation and Equipment
- Conduct frequent walk-throughs of the kitchen area and direct staff to correct deficiencies.
- Instruct staff on the correct usage and care of kitchen machinery, emphasizing safety.
- Oversee stewards to manage equipment needs, cleaning schedules, and health/safety and sanitation follow-ups.
Meetings and Communication
- Ensure smooth communication with direct reports and other Restaurant Managers/supervisors.
Physical Demands
- Bend, stoop, reach, and lift up to 50 lbs.

Required Education & Experience
- High School diploma or equivalent.
- Minimum of 3 years’ experience as a cook.
- Knowledge of various cooking procedures and methods.
- Food Handlers certification required.
