Overview
We are seeking a Lead Cook with proven experience in a kitchen environment and the ability to execute large-scale recipes and production. The position requires open availability to work between 7:00 AM - 5:00 PM, including some weekends and holidays.
Responsibilities
- Function as a Lead for your shift, ensuring an efficient and well-running shift while supervising other positions (Cook I / FSW)
- Prepare a variety of food items in accordance with assigned work instructions and menus
- Accurately and efficiently prepare a variety of meats, seafood, poultry, vegetables and other food items in broilers, ovens, grills, fryers and other kitchen equipment
- Refer to Daily Prep List at the start of each shift for assigned duties and complete opening and closing checklists daily
- Promptly report equipment and food quality or shortage problems to the Assistant Food Service Director/Food Service Manager
- Follow standard portion sizes, cooking methods, quality standards and kitchen rules, recipes, policies and procedures
- Stock and maintain sufficient levels of food products at line stations to ensure smooth serving of food
- Portion food products according to standard portion sizes and recipe specifications
- Complete required production paperwork and assign/in supervise inmates in completing their required tasks (food prep, serving, clean-up, pots, dishes, sanitation etc.)
- Maintain a clean and sanitary work station area
- Prepare food items for broiling, grilling, frying, sautéing or other cooking methods by portioning, battering, breading, seasoning and/or marinating according to directions
- Follow proper plate presentation and garnish setup for all dishes
- Handle, store, label and rotate all products properly and in accordance with applicable state laws
- May perform other duties as assigned
Requirements
- High School Diploma or GED and/or equivalent experience
- At least 18 years of age
- At least one (1) year of relevant cooking experience required
- Prior experience cooking in a cafeteria or large volume production facility a plus
- Prior knowledge and experience in a kitchen or large cafeteria setting preferred
- Experience with safety procedures as typical in a cafeteria or food service environment
