Reunion Plaza Senior Care and Rehabilitation Center in Texarkana, TX has an opportunity for a Cook that is passionate about creating quality food for our residents. Responsibilities
- Prepare food in accordance with standard menus and specifications, facility procedures, and prescribed dietary and sanitary regulations; follow recipes.
- Ensure proper storage of food and supplies.
- Supervise serving of meals by wait staff; ensure all residents have received meals.
- Direct and assist in cleaning work areas, equipment, and floors.
- Ensure fire and safety practices and procedures are followed.
- Understand and follow guidelines for food handling and storage, including all raw and prepared foods.
- Complete the daily Quick Check departmental review in the absence of the Nutrition Services Manager or as requested.
- Test and record temperatures of hot and cold foods; record temperature of cold food storage areas; correct or address negative results to the attention of supervisor.
- Properly discard expired or contaminated food items.
- Properly perform and enforce hand washing, wearing of gloves, and use of hair restraints.
- Comply with established infection control and universal precaution policies and procedures; use required protective wear when performing daily tasks.
- Follow and enforce methods to control cross-contamination.
- Prepare foods using standardized recipes and in the required amount specified by production worksheets and in accordance with special diet requirements.
- Use available tools (spreadsheet, prep-at-a-glance, production guides) to ensure timely and correct meal production and portion control; incorporate steps to properly pull, thaw and prep foods in advance of production need.
- Ensure foods prepared are served within meal serving hours and that quality, temperature and appearance of food is preserved.
- Serve meal in accordance with facility methods and using correct portion control and plating/presentation guidelines; provide a texture appropriate garnish for all entrees.
- Perform daily and scheduled cleaning of kitchen and equipment in accordance with established sanitation procedures.
- Ensure serving line and work area are cleaned and sanitized after each use.
- Clean and arrange food storage areas.
- Properly store, chill, and reheat leftovers for later use.
- Properly use 3 compartment sink and clean cooking pots & pans.
- Assist other department staff as needed to ensure timely production, service, and clean-up.
- Close the kitchen (PM shift) in accordance with policy and regulatory requirements.
- In the absence of NSM, oversee overall departmental function and compliance, maintaining communication with Administrator and/or Director of Nurses.
- Perform other duties as assigned.
Requirements
- One year experience as a cook in hotel, restaurant, hospital, or similar institution preferred.
- Food handlers’ card required, or Food Safety Certification where required by local ordinance.
- Must have fundamental understanding of sanitation, cleanliness, and personal hygiene.
- Must be able to tactfully communicate with co-workers, residents, family members, visitors, government agencies and the general public.
- Must have regular, predictable, and dependable attendance.
