Responsibilities
- Adhere to all foodservice standards and regulations as set forth by the New York State Department of Health.
- Preparation and cooking of all meals according to the menu.
- Preparation and cooking of special meals for residents when prescribed by the physician.
- Prepare substitute meal as noted on the substitute meal log provided by the facility.
- Must follow the rule of FIFO (First in, first out).
- Foods to be labeled, dated, and put away upon delivery.
- Ensure all leftover foods are properly covered, labeled, dated.
- Discard all leftover after 72 hours from opening.
- Responsible for the cleanliness and sanitation of the following: pantry room, cooler/freezer, kitchen, and dietary office.
- Responsible for the washing and cleaning of all uses, pots, pans, and utensils.
- Ensure all refrigerators and freezers have thermometers with proper storage temperatures.
- Keep records of food serving temperature, substitutions, and dated menus.
- Periodic meetings with the facility dietary consultant.
- Attends In-Service classes in relation to nutrition, food preparation and presentation and cooking both therapeutic and regular meals.
- Check daily census for accurate meal preparation.
- Regularly inquire about updates to residents diet roster.
- When necessary, the facility cook is required to take on other responsibilities as directed by administration.
Requirements
- Minimum of 18 years of age; high school diploma or equivalent preferred.
- Previous cooking experience required.
- High degree of personal cleanliness and hygiene required; health status suitable for food service required.
- Able to read and understand work assignments, as well as report verbally and provide written documentation as necessary.
- Respect for residents’ privacy and rights; display of genuine concern and empathy for the elderly.
- Able to perform tasks while upholding high standards of quality, cleanliness and kindness.
- Qualities of responsibility, diplomacy and ability to work well with fellow staff members.
- Physical endurance for frequent activity.
- Be able to occasionally lift boxes weighing 40 pounds.
