About the Role
To prepare and portion foods for the resort's food and beverage outlets.
Responsibilities
- Possess a solid background in making soups, stocks, grilling, and roasts with knowledge of varied methods and techniques to prepare food.
- Handle knives excellently and operate all kitchen equipment in a safe, efficient, and effective manner.
- Assume control of the kitchen in the absence of a Sous Chef.
- Follow the kitchen chain of command (Chefs, Cook I, Cook II, Cook III).
- Take an active role in the training of new cooks.
- Assist the Chef in maintaining the cleanliness and operations of the kitchen.
- Perform all other duties as assigned.
Requirements
- Minimum: High School Diploma or equivalent.
- Preferred: Associate Degree in culinary field or fifth-year college/university program certificate.
- Valid Driver’s License.
- Two to four years of related experience and/or training, or an equivalent combination of education and experience.
Skills
- Language Skills: Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals. Ability to write routine reports and correspondence. Ability to speak effectively before groups of customers or employees.
- Mathematical Skills: Ability to calculate figures and amounts such as discounts, interest, commissions, proportions, percentages, area, circumference, and volume. Ability to apply concepts of basic algebra and geometry.
- Reasoning Ability: Ability to solve practical problems and deal with concrete variables in situations with limited standardization. Ability to interpret instructions in written, oral, diagram, or schedule form.
- Ability to work well with others in a close environment, demonstrating speed and efficiency on the line.
Physical Requirements
- Regularly walks and stands.
- Lifts up to 50 lbs.
- Seldom/never sits or does computer work.
Work Environment
- Frequently exposed to wet and/or humid conditions and extreme heat.
- Occasionally exposed to moving mechanical parts, fumes or airborne particles, toxic or caustic chemicals, outside weather conditions, and extreme cold.
- Noise level in the work environment is usually moderate.
Independent Judgement
Performs tasks and duties under general supervision using established procedures and innovation. Chooses from limited alternatives to resolve problems. Occasional independent judgment is required to complete work assignments. Often makes recommendations to work procedures, policies, and practices.
