Initial placement within the salary range is based on an individual's relevant knowledge, skills, and experience. Responsibilities
- Prepare and display/plate foods as venue requires including banquets, receptions, buffets, a la carte in order to assist in reaching profitability, guest satisfaction, workforce strength, and compliance goals.
- Report to Sous Chef at start of shift to receive instruction as to daily specials and menu changes.
- Set up mise en place as per posted instructions.
- Report any spoilage or shortage to Sous Chef immediately.
- Prepare recipe per standardized recipes and production sheets.
- Prepare plated menu items as ordered, per specifications on hot food production line with strict attention to detail, speed, and accuracy.
- Must have knowledge of soups, sauces, quantity cooking, and proper food sanitation and handling.
- Perform well under pressure, meeting production schedules and fulfilling requisitions in a timely manner.
- Maintain work station and all storage areas in accordance with HCPN Standards and PA Department of Health Standards.
- Absorb and follow instructions from Sous Chef.
- Absorb and follow instructions from other supervisors as needed.
- Complete assigned shift by properly storing all perishable foods and reporting to Sous Chef for closing details.
Qualifications
- Culinary degree preferred, or 3 to 5 years of previous relevant experience required.
- Must have the ability to read, write, and speak English.
- Must have the ability to read and interpret documents, such as safety rules and operating and maintenance instructions.
- Must have the ability to present information and respond to questions from employees.
- Must have the ability to read, analyze, and interpret various metrics.
- Must have the ability to perform basic math skills.
- Must have the ability to identify problems, collect data, analyze, and draw valid conclusions.
- Must have the ability to solve practical problems and deal with a variety of situations.
- Must have the ability to interpret a variety of instructions (i.e., written, oral, etc.).
- Must qualify for a license with the Pennsylvania State Racing Commission and meet any credentialing requirements of the Pennsylvania Gaming Control Board.
