About the role

The Junior Sous-Chef maintains a high level of quality and presentation for all food preparations, and oversees the day-to-day operations of the Continental kitchen. They assist the Chef de Partie in managing the kitchen.

Responsibilities

• Prepare and cook Continental dishes according to standardized recipes and brand standards.
• Aid the Chef de Partie in the day-to-day operations of the Continental kitchen.
• Ensure all mise en place is completed as per standard operating procedures.
• Monitor food costs and control waste.
• Control food par levels and ensure proper inventory management.
• Assist in setting up and breaking down stations as needed.
• Follow all safety and sanitation protocols.
• Prepare and serve food items as directed by the Chef de Partie.

Requirements

• Food Handlers card required.
• Ability to read and understand BEO.
• Knowledge of Fairmont Grand Del Mar standards and specifications.
• Ability to work all banquet functions.
• Ability to cut, trim, and bone meat prior to cooking.
• Ability to wash, peel, cut, and shred fruits and vegetables.
• Positive relationship with other departments.
• Ability to bake, broil, sauté, and steam meats, fish, and vegetables.
• Ability to measure and mix ingredients according to recipes.

Qualifications

• High school diploma or equivalent.
• Minimum of 1 year of experience in a similar role.
• Valid Food Handlers card.
• Must be able to speak and understand basic English.

• Ability to follow instructions and work independently.
• Excellent communication skills.
• Physical ability to perform tasks such as pushing, pulling, bending, stooping, and upward reaching.
