About the role
The primary purpose of this position is to supervise all daily operations of dining outlets, including hiring and training staff, scheduling, counseling, payroll control, and training. You will oversee service for all meals to ensure guests receive the highest level of service set by the resort. Must be willing and able to work various/multiple outlets and shifts within the Food and Beverage Division.
Requirements
- High school diploma or general education degree (GED) required.
- Minimum of two years of related experience; or an equivalent combination of education and experience.
- Valid driver’s license and successful completion of a pre-employment Motor Vehicle Report (MVR) and annual MVRs, according to company guidelines.
- Must follow safe, defensive driving practices, obey all traffic laws, and adhere to company policies, including the Substance Abuse Policy.
- Never drive under the influence of drugs, alcohol, or medications that may impair your ability to operate a vehicle safely.
- Proficient with Micros and required paperwork.
- Can perform the duties of servers and bartenders.
- Familiar with pertinent ABC laws.
Responsibilities
- Interview and hire dining outlet employees in accordance with resort standards.
- Ensure all employees are trained to Pinehurst standards.
- Implement proper controls for reservations and ensure rooms are set for all meal periods.
- Participate in the performance review and disciplinary counseling processes for all dining outlet employees.
- Assign side work, supervise cleaning and stocking, and ensure proper supplies are on hand.
- Allocate service stations for meal periods and participate in required meetings (Food and Beverage, Manager Meetings, Pre-Convention, BEO).
- Handle all guest concerns in dining outlets.
- Manage payroll and expense control for dining outlets.
- Develop staff (e.g., busser to server) and ensure timely completion of reports (menu scores, special events summaries, maintenance walk-throughs).
- Assume total accountability for all dining outlet activities.
- Complete weekly schedules by Saturday and meet payroll budgets set by the F&B Director.
- Check resumes daily to accommodate group dining arrangements, assign workstations, and pre-assign tables for larger reservations.
- Prepare gratuity sheets, morning charts, and meal checkouts.
- Maintain a systematic training calendar for pre-shift meetings and track staff benefit hours monthly.
- Order supplies, fine-tune buffets, and prepare coffee breaks.
- Greet and seat guests while monitoring consistent use of service standards.
- Assist with period-end inventory and respond to P&L statements.
- Act as a liaison for Room Service.
- Perform other job-related duties as requested.
Supervisory Responsibilities
- Manages hourly staff (30-40 employees) in the Food and Beverage Division.
- Responsible for the overall direction, coordination, and evaluation of Food and Beverage staff at assigned venues.
- Directly supervises non-supervisory employees, including interviewing, hiring, training, planning, assigning work, appraising performance, rewarding, disciplining, and addressing complaints.

- Occasionally required to sit, use hands to finger/handle, or taste/smell.
- Must frequently lift and/or move up to 25 pounds or more.

Pay
$15-$22 average per hour annually.
