Brine Operator I -Mozzarella Production Department
About the role
The Operator I - Brine position at Lactalis American Group is responsible for operating the Brine and Ultrafiltration (UF) systems to ensure the temperature, dimensions, and consistency of cheese are controlled. This role involves loading cheese blocks into racks, performing core temperature sampling, and maintaining records according to policy.
Responsibilities
- Safely operate the Brine dip and UF system.
- Start up, shut down, perform CIP (Clean-In-Place), and troubleshoot equipment as needed.
- Load cheese blocks into large racks.
- Perform core temperature sampling.
- Operate Human Machine Interface (HMI) and maintain all records/documents per policy.
- Take immediate corrective action for any product that does not meet quality or product specifications.
- Contribute to continual process improvement and increased performance.
- Participate in internal and external audits to maintain ISO22000/ISO9001/HACCP compliance.
- Attend department meetings and trainings as assigned by supervisor or manager.
Requirements
- A high school diploma or GED.
- Previous experience working in manufacturing or food industry preferred.
- Ability to read and comprehend written instructions.
- Ability to identify and adjust variables within the manufacturing process.
- Basic math skills (calculating averages).
