About Us

Scratch Bakery Cafe is a neighborhood bakery dedicated to handcrafting artisan breads, pastries, and wholesome café offerings from scratch using high-quality ingredients. We are seeking a skilled and passionate Bread Baker to join our overnight production team in our Laguna Hills facility.

Job Responsibilities

• Mix, shape, proof, and bake a variety of scratch-made breads (sourdough, baguettes, various buns, focaccia, brioche, etc.)
• Maintain consistent product quality, appearance, and freshness
• Operate ovens, mixers, proofers, and other bakery equipment safely and efficiently
• Manage dough fermentation schedules and temperature controls
• Ensure a clean and sanitary workspace in compliance with food safety standards
• Follow recipes and portioning standards precisely
• Communicate with pastry and café teams for coordinated production
• Assist with prep work and mise en place for following shifts when needed
• Be punctual and dependable for overnight production flow

Requirements

• Minimum 3 years of professional bread baking experience (artisan preferred)
• Strong understanding of fermentation, hydration, shaping, and scoring techniques
• Ability to lift 50 lbs and stand for long periods in a fast-paced environment

About

At Scratch Bakery Cafe, we bake handmade breads fresh every day, the way bread has been made for centuries in Europe. We use the finest all-natural ingredients and leaven our doughs with natural starters. Our skilled artisan baker then shapes each loaf by hand to preserve the open, airy structure of the dough. The loaves are allowed to rise slowly to enhance the complex flavors of the wheat. Finally, the bread is scored by hand and baked in our specialty ovens to create its beautiful caramel-colored, crunchy crust.

We seek out the finest ingredients, buying organic, local, and small-producer items whenever possible. We respect the environment by using all-natural, biodegradable cleaning products, by recycling, and by using as many sustainably produced ingredients as possible. And, we like to be involved in our community by making charitable donations to several local arts, educational, and humanitarian organizations.
