About the role

Beef Modernization Sorters are responsible for making precise knife cuts to ensure correct decisions regarding pathology, presentation, or potential sanitary dressing deficiencies.

Responsibilities

• Perform precision knife cuts under high-paced conditions
• Ensure food safety and quality as the primary responsibility
• Undergo intensive and recurring training
• Willingness to train and educate others
• Work closely with USDA-FSIS Consumer Safety Inspectors and other harvest floor departments
• Perform all other duties as assigned

Requirements

• Harvest floor knife experience
• Ability to sharpen and maintain a sharp knife
• Understanding of anatomy, physiology, and pathological disease processes
• Excellent communication skills
• Detail-oriented and disciplined
• Mental challenge-seeking attitude
• Ability to lift, push, and pull product repetitively
• Effective teamwork skills
