Viceroy Snowmass, located in Snowmass Village, CO, is looking for a Banquet Chef to join our team. Nestled at the base of majestic Snowmass Mountain, the resort offers unparalleled experiences in the heart of the Colorado Rockies. Responsibilities

• Menu Design: Crafting diverse, seasonal banquet menus that cater to high-end weddings, corporate galas, and private functions.
• Quality Control: Ensuring every plate—whether the 1st or the 500th—meets the rigorous 5-star standards of presentation, temperature, and flavor.
• Customization: Working closely with the Events and Sales teams to create bespoke dining experiences based on specific guest requirements and dietary restrictions.
• Production Planning: Managing complex production schedules (prep lists, "pull" sheets, and banquet event orders) to ensure seamless execution.
• Cost Management: Overseeing food costs, labor budgets, and inventory to maximize profitability without compromising quality.
• Staff Mentorship: Leading a large brigade of sous chefs, line cooks, and stewards, fostering a culture of professional growth and high performance.
• HACCP Standards: Maintaining impeccable kitchen hygiene and strictly adhering to local and international food safety regulations.
• Equipment Maintenance: Overseeing the care and operation of high-volume kitchen equipment.

Qualifications

• Guest Satisfaction Scores: Maintaining high ratings for food quality and presentation in post-event surveys.
• Food Cost Percentage: Keeping actual costs in line with budgeted targets.
• Health & Safety Audits: Consistently achieving top marks in internal and external kitchen inspections.

Pay & Schedule

• Pay Rate: $70,000 to $75,000/Salary
• Schedule: Flexible Schedule. Some Nights. Weekends. and Holidays
• Employment Status: Full-Time Year Round
