Banquet Captain
About the role
Located in Johnson City, Texas, Carter Creek Winery Resort & Spa offers authentic Texan hospitality. The resort features a premiere winery, Restaurant/Brewery, banquets, and special events. The Carter Hospitality Group, with 25 years of experience in the hospitality field, operates the resort.
The role is responsible for the supervision of the banquet staff and coordinates all food and beverage services within the banquet department. This includes training the banquet team, overseeing the enforcement of hotel standards, and working in the Restaurant during Banquet off times.
Responsibilities
- Coordinates with the event host on all aspects of the banquet function
- Performs planning and organization functions for the banquet department, including maintaining the banquet logbook and function sheets
- Checks banquet rooms, service and kitchen areas for cleanliness, proper set up, and sufficient supplies and equipment
- Oversees all aspects of assigned banquet function activities, ensuring that food counters are properly set and ready for execution
- Supervises and trains staff in the set up and break down of assigned banquets rooms and in the service of food and beverages
- Ensures all guest requirements are set and ready 30 minutes before event start time
- Coordinates function details with banquets, conference planning, and kitchen staff
- Maintains constant contact with the banquet chef to ensure conclusion between food production and food service
- Monitors banquet personnel in the performance of their duties and assists in conducting pre-shift and pre-function meetings
- Communicates frequently with function hosts to ensure their needs are being met
- Ensures all guest checks are billed and signed by the host according to planned arrangements
- Completes daily sales reconciliation and postings and provides them to the front office
- Displays awareness and compliance with hotel security, safety, and emergency procedures
- Ensures high grooming and hygiene standards are met by all banquets staff
- Monitors the profitability of functions to ensure quality of portions control while minimizing waste and broken or lost supplies
Requirements
- Two years previous Banquet Captain Experience preferred
- Previous hospitality experience required
- Thorough knowledge of state liquor regulations and ability to identify when a patron has had their alcohol limit
Certificate Requirements
- Food Handler’s Certification
- TABC Certification (must be obtained/current upon hire and maintained for duration of employment)
Working Conditions
Splits time between indoor and outdoor events, with moderate exposure to hazardous substances and fumes, and possible exposure to blood-borne pathogens. Works in a bi-level structure with extensive facilities, including temperature-controlled, clean, and well-lighted offices, guest rooms, and public areas.
Physical Demands
Stands and walks short to moderate distances through shift, bends, stoops, and reaches to perform routine job tasks. Routinely required to handle and move objects weighing up to 30 lbs. over moderate distances.
