About the Role

The Assistant Professor – Food Production will deliver academic instruction and hands-on culinary training, developing students' technical and professional competencies while ensuring strong alignment between classroom learning, kitchen operations, and hospitality industry requirements. The ideal candidate should have a strong foundation in culinary arts and food production, practical experience in professional kitchens, and the ability to effectively train students through demonstrations, practical sessions, and industry-oriented projects.

Responsibilities

  • Deliver and conduct hands-on kitchen sessions covering basic, intermediate, and advanced culinary techniques.
  • Teach areas such as:
    • Classical and contemporary cooking techniques
    • Indian, Continental, and international cuisines
    • Garde manger and cold kitchen operations
    • Bakery and basic patisserie
    • Stocks, soups, sauces, and accompaniments
    • Meat, poultry, seafood, and vegetable preparation
    • Menu planning and recipe standardisation
    • Food costing and portion control
    • Kitchen organisation and workflow
    • Food presentation, plating, and garnishing
  • Demonstrate professional kitchen practices, including mise en place, cooking methods, equipment handling, and kitchen discipline.
  • Ensure adherence to food safety, hygiene, sanitation, and occupational safety standards during practical sessions.
  • Develop lesson plans, practical manuals, assessments, assignments, and other academic resources.
  • Evaluate students through theory examinations, practical examinations, projects, presentations, and continuous assessments.
  • Mentor students and support their development of culinary, professional, and employability skills.
  • Maintain practical kitchen records, inventory requirements, recipe files, and other departmental documentation.
  • Coordinate with the kitchen/lab team to ensure availability and proper utilisation of ingredients, equipment, and consumables.
  • Introduce students to current culinary trends, sustainable food practices, modern cooking techniques, and industry innovations.
  • Organise guest lectures, culinary demonstrations, workshops, competitions, and industry visits.
  • Facilitate students' exposure to real-world hospitality operations and support their On-the-Job Learning (OJL) and industry engagement.
  • Build and maintain relationships with hotels, restaurants, resorts, chefs, and other hospitality industry professionals.
  • Participate in curriculum development and continuously update course content based on industry requirements.
  • Contribute to departmental academic activities, student events, research, publications, and institutional initiatives.
  • Ensure compliance with university academic policies, quality standards, and applicable regulatory requirements.

Requirements

  • Ph.D. in Hotel Management / Hospitality Management / Culinary Arts / Food Production / Tourism or a relevant discipline is preferred.
  • Candidates pursuing or having completed a Ph.D. with relevant research/publications in hospitality, culinary arts, or food production will be an added advantage.
  • Relevant industry certifications, research publications, and/or professional culinary certifications will be preferred.
  • Strong academic and practical exposure to Food Production / Culinary Operations.
  • Relevant teaching/training experience in a hotel management institute, university, college, or vocational/skill-based education institution will be preferred.
