About the role
We are looking for a true baking and pastry professional to join our team of artisan bakers. As an Assistant Head Baker at Ole & Steen you will help oversee creation of real Danish bread and pastries. You will produce artisan Danish breads, rolls, and laminated dough as a part of an enthusiastic and international team.
Responsibilities
- Oversee daily production of breads, ryes, rolls, and pastries according to our traditional Danish recipes
- Observe and maintain the quality of products being baked, and adjust oven temperatures, baking time accordingly
- Management of a team of up to 6 – handling daily scheduling
- Bakery management, including organization and cleanliness of dried storage and fridges
- Maintaining portion standards
- Monitoring inventory of ingredients for production
- Properly labeling and storing ingredients
- Checking equipment to ensure that it meets health and safety regulations
- Maintaining a clean and orderly bake shop and adhering to health and safety standards
Qualifications & Requirements
- Completion of a Culinary School program or apprenticeship preferred
- A positive and problem-solving attitude
- A genuine passion and knowledge for bread
- Dependable and hard-working
- 2-4 years of professional baking experience preferred. Experience with Danish or Scandinavian baking methods is a huge plus!
- Ability to work overnight, weekends, and some holidays
- Able to lift 50+ lbs without restrictions
- The ability to stand and/or bend for extended periods of time to perform essential job functions
- Basic math skills
- A highly honed sense of urgency
- Excellent time management skills
- Thoroughly follow company procedures according to health and safety standards
- Adhere to all food safety regulations and procedures
