About the role

The Assistant Food & Beverage Manager – Bars oversees the daily operation of The Maybourne Bar and The Cigar & Whiskey Bar, ensuring exceptional service delivery, elevated beverage programs, and Forbes Five-Star standards. This role supports the overall objectives of the Food & Beverage Division and collaborates with various departments to enhance the bar experience.

Responsibilities

  • Oversee the daily operation of The Maybourne Bar and The Cigar & Whiskey Bar.
  • Ensure all guests receive exceptional service that exceeds Forbes Travel Guide and LQA standards.
  • Maintain high standards of cleanliness, organization, maintenance, and operational readiness throughout all bar venues.
  • Ensure proper opening, closing, cash handling, and service procedures are consistently followed.
  • Collaborate with culinary leadership to ensure seamless food and beverage coordination.
  • Conduct daily floor presence, guest engagement, and quality assurance inspections.
  • Collaborate with the Head Mixologist and beverage leadership team to maintain innovative cocktail, spirits, wine, and non-alcoholic beverage programs.
  • Monitor beverage quality, consistency, recipe adherence, and presentation standards.
  • Ensure compliance with all federal, state, and local alcohol service regulations.
  • Assist with seasonal menu development, promotions, and special activations.
  • Support vendor relationships, tastings, brand partnerships, and product sourcing initiatives.
  • Manage labor, revenue, and expense performance for both bar outlets.
  • Develop strategies to increase sales, guest capture, average check, and profitability.
  • Monitor inventory levels, purchasing practices, product rotation, and beverage costs.
  • Conduct monthly inventories and investigate variances.
  • Aid in forecasting, budgeting, payroll administration, and financial reporting.
  • Analyze operational metrics and implement cost-control initiatives while maintaining service standards.
  • Maintain a visible presence on the floor during service periods.
  • Create memorable guest experiences and personalize service encounters.
  • Handle guest concerns and service recovery opportunities promptly and professionally.
  • Foster an environment that reflects luxury hospitality standards and exceptional attention to detail.
  • Support VIP events, activations, partnerships, and special programming initiatives.
  • Recruit, interview, onboard, train, coach, and develop bar colleagues.
  • Conduct daily lineups, departmental meetings, and ongoing training sessions.
  • Create a culture of accountability, teamwork, recognition, and continuous improvement.
  • Monitor colleague performance and provide coaching, feedback, and development plans.
  • Ensure compliance with company policies, wage and hour regulations, and departmental standards.
  • Partner with Human Resources regarding performance management and employee relations matters.
  • Maintain compliance with health, safety, sanitation, and alcohol service regulations.
  • Maintain all required certifications and operational documentation.

Qualifications

  • Good attitude, attention to detail, and ability to work under pressure.
  • Excellent customer service skills and a positive attitude.
  • Proficient in reading, writing, and speaking English.
  • Comprehensive knowledge of POS systems, Microsoft Word, Excel, Outlook, etc.
  • Bachelor’s degree or higher in a related field.
  • At least 3 years of progressive Food & Beverage management experience, including a minimum of 3 years in a Bar Manager role within a high volume, fast paced, major luxury brand hotel or resort.
  • Full-Service Hotel experience is required, strong knowledge of various brands.
  • Work varied shifts, including weekends and holidays.
  • Food Safety Employee Training required.
  • Training for Intervention Procedures (TIPS) required.
  • Ownership of the Whiskey Bar reservation experience and access controls.
  • Management of Forbes Travel Guide beverage service standards and guest engagement initiatives.
  • Support of luxury brand partnerships, spirit activations, VIP tastings, and hosted events.
  • Collaboration with Marketing, Concierge, and Front Office teams to drive awareness and guest participation in bar experiences.
  • Oversight of specialty programming, seasonal cocktail launches, and revenue-generating promotions.

Physical Requirements

  • Occasionally move about inside the office to access file cabinets, office machinery, etc.
  • Constantly operate a computer and other office productivity machinery, such as a computer, copy machine, printer, etc.
  • Constantly communicate with vendors, clients, staff members, therefore must be able to communicate, converse with and exchange information.
  • Must be able to detect, determine, perceive, identify, recognize, and assess from long distances.
  • Light to moderate lifting is required.

  • Ability to stand at a computer terminal for an extended period of time.
  • Must be able to bend, stoop, squat and stretch to fulfill tasks.
  • Must be physically able to lift up to 50 lbs. and carry heavy trays and equipment, as well as delicate china and barware.
  • Must be physically able to walk without assistance on various surfaces for an extended period.
  • The position requires manual dexterity, grasping, writing, repetitive motion, bending and climbing.
