Assistant Director of Food and Beverage
About the role
Viceroy Snowmass, a luxury resort at the base of Snowmass Mountain in the Colorado Rockies, seeks an Assistant Director of Food and Beverage. This senior leadership role serves as the principal deputy to the Director of Food & Beverage, assisting in directing the property's full food and beverage ecosystem — encompassing all dining outlets, destination bars and lounges, in-suite dining, banquet and event services, pool and beach F&B, and stewarding operations — to the highest standards of ultra-luxury hospitality. The ideal candidate brings multi-outlet management experience, working command of beverage programming, mixology, and wine, and embodies Forbes Five-Star and LQA service philosophy.
Responsibilities
- Lead multi-outlet operations spanning signature restaurants, casual dining, destination bars, in-suite dining, banquets, pool and beach service, and stewarding — balancing the distinct identity, team culture, and financial targets of each outlet while overseeing day-to-day operations, strategic planning, revenue management, and long-term concept development.
- Champion Forbes Five-Star and LQA service standards across all outlets; lead internal quality audits achieving scores of 95% or above and own resulting corrective action plans through to completion, while monitoring guest satisfaction data (post-stay surveys, comment cards, online reviews, Medallia) to drive measurable service improvement.
- Apply working knowledge of mixology and craft beverage culture to guide bar teams on cocktail technique, recipe development, ingredient sourcing, batching standards, and presentation; partner with the Beverage Manager on cocktail menu development, spirits portfolio curation, zero-proof programming, and bar activations that differentiate the property.
- Leverage wine knowledge to support the Sommelier in wine list reviews, by-the-glass program optimization, cellar management oversight, and pairing dinner programming; participate in wine and spirits tastings, vendor presentations, and allocation decisions to ensure the beverage program reflects both commercial discipline and connoisseurship.
- Assist in developing and managing the annual F&B operating budget, including revenue forecasting, labor planning, cost of goods management, and capital expenditure review; analyze daily, weekly, and monthly P&L reports across all outlets, identify variances, and implement strategies to optimize profitability without compromising guest experience.
- Oversee beverage cost controls, perpetual inventory systems, and liquor control policies ensuring compliance with hotel, brand, and regulatory standards; partner with Revenue Management to develop promotional strategies, dynamic pricing, and upselling initiatives that maximize F&B revenue per cover.
- Lead, mentor, and develop a diverse team of F&B managers, supervisors, and associates across multiple outlets; foster a culture of excellence, accountability, and genuine hospitality while partnering with Human Resources in recruitment, onboarding, performance management, succession planning, and talent development.
- Conduct regular pre-shift briefings, training sessions, and performance reviews ensuring associates are aligned with Forbes Five-Star and LQA service benchmarks; cultivate a team environment grounded in diversity, equity, inclusion, and mutual respect consistent with company values.
- Personally interact with VIP and returning guests, building genuine relationships that reflect Relationship Hospitality; ensure all guest interactions meet or exceed Forbes Five-Star criteria — warm, personalized greeting by name, proactive anticipation of needs, seamless resolution of concerns within established timeframes.
- Coordinate closely with Guest Relations, Butler Services, and Front Office to personalize in-room dining amenities, special occasion setups, and VIP arrival experiences; lead interdepartmental collaboration ensuring F&B integrates seamlessly with rooms, spa, events, and recreation to deliver cohesive, world-class guest journeys.
