About the Role
As the leaders of the Kitchen, Assistant Kitchen Managers (AKMs) are the culinary experts who keep our kitchens in pristine operating conditions. You will select and motivate an elite group of back-of-house employees.
Responsibilities
- Consistently meet or exceed food safety and food quality standards to ensure the guest experience.
- Assist in hiring, training, retaining, and developing promotable people.
- Optimize financial results by controlling costs (e.g., food waste, food production).
- Execute the Flight plan when scheduled to be Kitchen Manager on duty.
- Ensure the execution of Dave and Buster's operating standards and philosophies in the kitchen.
- Supervise the kitchen during a shift, creating energy, teamwork, and morale to provide an excellent guest experience.
- Develop a game plan for the shift, including goals for ticket times, staff development, and profitability.
- Execute opening, pre-closing, and closing procedures according to standards.
- Hold staff accountable for performance by providing feedback throughout the shift.
- Manage labor goals for the shift by recommending staff cuts as volume dictates to maximize productivity.
- Maintain a safe (physical plant and food hygiene) and secure environment for all staff.
- Ensure the freshness of all food products through proper purchasing and product rotation.
- Guarantee the quality of all products served to guests through recipe adherence, quality control, and ticket timelines.
- Assist the Kitchen Manager in setting department goals.
- Oversee the execution and administration of the MIT training program and staff hat program.
- Conduct recipe and station validation daily.
- Oversee the development of certified trainers in the kitchen.
- Assist the Kitchen Manager with staff performance evaluations.
- Make wage increase and termination recommendations to the Kitchen Manager as needed.
- Follow purchasing guidelines to ensure financial accountability for product and supply inventory.
- Complete all required paperwork in a timely and accurate manner.
- Communicate regularly with staff using available tools (e.g., one-on-ones).
- Report weekly to the Kitchen Manager on progress toward departmental goals.
- Complete projects assigned by the Kitchen Manager in a timely fashion.
- Assist in following up on changes to food products, kitchen systems, staff training, and procedures.
- Ensure the timely completion of all repairs to kitchen equipment and facilities.
Requirements
- Must be open to relocation as part of career progression with Dave & Buster’s. Inability to relocate may impact continued employment in the AKM role.
- Work days, nights, and/or weekends as required.
- Work in a noisy, fast-paced environment with distracting conditions.
- Move about the facility and stand for long periods of time.
- Read and write handwritten notes.
- Lift and carry up to 50-60 pounds.
- Regular and predictable attendance is required.
- Must be at least 21 years of age.
Pay
Salary range: $21.00 – $24.15 per hour.
