AM Line Cook
About the role
The Perlant is a private, wine-focused membership club. Our members come to us for exceptional wine, food and hospitality, and they come back because every visit feels considered. We cook with care, pair with intention and hold every plate to the same standard.
We're looking for AM line cooks who set the tone for the whole day. You'll open the kitchen, run a live-fire grill through lunch, and hand off a station the PM team can step right into. We run as one team, and nobody here is left to drown. If you want to sharpen your skills and grow into more responsibility, this role is built for that.
Our kitchen culture: one team on every ticket — we work together and nobody gets left behind. Old-school technique applied to new, exciting ingredients. We eat together, with time to share a meal as a team. One voice with real autonomy — we move as one kitchen and you're trusted to make decisions that make service better. Total focus in service: outside distractions stay outside. Respect in every conversation — when it's time for a "chat in the walk-in," we bring everything forward with respect and understanding.
Responsibilities
- Come in ready: set up and prep your station with the next shift in mind as well as your own
- Have fresh herbs picked and chopped before every service
- Wipe down the line and be ready before the first ticket comes in
- Own the fire: once the grill is lit, keep the fire going and manage ash buildup and cleanup all through the shift
- Communicate constantly: keep a running count of your proteins, and tell your chef when you're down to 5 orders of anything
- Keep your station clean and organized all through service
- Hand off with care: as lunch turns into dinner, give the PM cook on your station a verbal pass-off that covers high-priority prep
- Before you leave, check out with the chef and pass off the next day's projects
Requirements
- 1–2+ years of line experience in a quality-focused kitchen
- Solid knife skills; grill or live-fire experience is a plus
- A team-first attitude and clear communication

Benefits
- Health insurance
- Paid time off
- Staff meals
- Dining and wine discounts
- Cross-training on every station, including live-fire cooking
- Hands-on mentorship from our chef and sous chef
- Exposure to our wine program and pairing-driven menus
