Dining Hall Foreperson

The Dining Hall Foreperson assists the Head Cook in coordinating food preparation and helps cook buffet-style meals for employees/crew/customers.

Note: Effective 1 December 2024, Dining Hall Foreperson II residing in Trident housing will be subject to a co-pay of $15 per day for room and board, for each day that at least 8 hours of work is offered.

Essential Functions

  • Maintain strict food safety standards and ensures kitchen staff adhere to set standards, procedures, department rules and sanitation requirements.
  • Ensure all operations meet DEC and OSHA requirements and ensure consistent cleanliness and upkeep of the Dining Hall area.
  • Lead, train, and support kitchen staff.
  • Oversee and prepare meals for all shifts. In addition, oversee portion control and presentation, ensuring all meals meet standards for quality.
  • Manage food orders, inventory, and vendor communication.
  • Provides hands-on supervision and oversight for the preparation, cooking, and portioning of meals, while coordinating staffing with operations leadership.
  • Conduct routine and deep kitchen cleaning.
  • Coincide with the Food & Beverage Manager on remote work.
  • Use Microsoft Office and Teams for reporting and communication.
  • Perform activities of workers led as needed.
  • Perform other related duties as assigned.

Additional Responsibilities

  • Acquire knowledge of Trident’s Environmental and Safety Policies by completing required training programs and performing designated work activities in accordance with training and procedures/work instructions.
  • Notify designated personnel of any environmental or safety incidents or risks not previously documented, in accordance with Environmental Awareness and/or safety trainings.
  • While performing duties of this job, the employee will frequently engage in teamwork.
  • The employee will occasionally be required to use interpersonal and customer service skills.
  • The employee will need to speak and read English.

Minimum Requirements

  • At least 2 years experience in a Chef or Kitchen Lead position.
  • Preferred qualifications include 3-5 years experience in a Chef or Kitchen Lead position, one year certificate from college or technical school, one year of related experience and/or training, or equivalent combination of education and experience.
  • An HS Diploma or equivalent.
  • Knowledge, skillsets, and abilities include catering experience, remote work-site experience, current SERV Safe Certification, knowledge of food safety and cleanliness standards, proficiency using Microsoft Office Suite including Outlook, Teams, and Excel, bilingual in Spanish, and physical demands such as standing for extended periods, lifting heavy loads, and working in cold environments.
