Responsibilities
- Oversees all aspects of front-of-house operations for Whiskey Prime Steakhouse and ensures execution of AAA 4-Diamond service standards.
- Prepares work schedules with the assistance of supervisors while ensuring appropriate staffing levels based on business volume and guest expectations.
- Partners with the Chef de Cuisine and/or Sous Chef to ensure seamless execution of food and beverage standards and overall guest experience.
- Greets and interacts with guests in a friendly, professional, polished, and attentive manner consistent with luxury service expectations.
- Responsible for proper rotation, quality, and presentation of all front-of-house product.
- Supervises all FOH operations staff including hiring, training, coaching, work direction, appearance standards, policy knowledge and compliance, safety, counseling, discipline, pay administration, and performance evaluations.
- Maintains and elevates beverage program standards by staying current with spirits, beer, wine, and whiskey trends and industry innovations.
- Provides leadership in the execution, measurement, and continuous improvement of guest service standards within Food and Beverage operations.
- Maintains acceptable inventory percentage levels in alignment with revenue goals and operational targets.
- Maintains complete knowledge of all liquor brands, beers, non-alcoholic selections, wines, whiskey offerings, glassware, garnishes, presentation standards, and pricing.
- Establishes and maintains par levels for supplies, beer, liquor, wine, whiskey, and equipment.
- Implements best practices to ensure appropriate staffing levels across all positions in relation to guest service standards and business volume.
- Conducts monthly inventory of all front-of-house product in a timely and accurate manner.
- Sets and enforces departmental standards for FOH setups, cleanliness, training, personal appearance, guest service, and overall presentation.
- Responsible for monthly P&L performance and controlling operational costs.
- Ensures compliance with all MAST alcohol service guidelines and Washington Liquor Control Commission regulations.
- Partners with purchasing to communicate with suppliers regarding equipment, wine, spirits, and beverage products.
- Maintains quality, sanitation, and safety procedures always.
- Oversees and maintains the physical appearance of the dining room, including furnishings, flooring, fixtures, and overall presentation standards.
- Greets and interacts with guests in a manner consistent with AAA 4-Diamond expectations and ensures leadership presence on the floor.
- Work nights, weekends and holidays as required.
- Performs other duties as assigned.
Qualifications
- Exceptional guest service skills required.
- Must be at least 21 years of age.
- Minimum 5 years of progressive experience as a restaurant manager.
- Minimum 3 years upscale/luxury fine dining experience as a restaurant manager.
- Strong understanding of AAA 4-Diamond service standards.
- Extensive knowledge of beverage service, wine, spirits, and whiskey programs required.
- Strong knowledge of guest service standards, labor management, and cost control required.
- Highly organized, detail-oriented, with strong time management and communication skills.
- Ability to maintain a positive attitude and quality control while managing tight deadlines and high-pressure situations.
- Ability to work independently and demonstrate strong critical thinking, leadership, and problem-solving skills.
- Casino/resort experience preferred.
- Wine Spectator award-winning experience preferred.
- WSET Level 2 or higher preferred.
Certificates, Licenses, Regulations
- Must be able to obtain and maintain a Class B gaming license from the Stillaguamish Tribal Gaming Agency.
- Must be able to obtain and maintain a Washington State Health Card (Food Worker Card).
- Must be able to obtain and maintain a Washington State Mandatory Alcohol Server Training (MAST) Class 12 Mixologist Permit.
Physical Demands and Work Environment
- Constantly requires the ability to receive detailed information through oral and written communication.
- The position requires exerting up to 50 pounds of force occasionally, and/or up to 20 pounds of force frequently, and/or up to 10 pounds of force constantly to move objects.
- Requires repetitive movement daily with sedentary work, occasional bending and crouching.
- There are no adverse conditions, but employee is exposed to tobacco smoke on a regular basis.
- This is a 24-hour, 7 days a week work operation.
