The author approaches this new phenomenon without ostracism or flattery.
Context
Wine without sulfites has its own genuine existence. Organic wine is experiencing significant growth, and we are witnessing the boom of this other category: sulfite-free wines. To meet the surge in consumer demand, merchants, cooperatives, and estates are putting such wines on the market without mastering the perilous techniques involved, while major research laboratories are working on the subject without success.
About the Author
Claude Reynaud is a winemaker passionate about history. His family has been in the craft of vine and wine for five generations. He farmed conventionally throughout his life in the Gard region, but late in his career he transitioned to sustainable agriculture, as if by a surge of conscience. In the early 2000s, he handed over responsibility for the estate to his son, who converted the entire property to organic farming and discovered a process for producing organic wines without sulfite preservatives. This was a revelation that prompted the author to immerse himself in a new universe, which he now decides to share.
