Sous Chef

About the role

This position is responsible for planning, preparing, setting up, and providing quality service in all areas of kitchen production. The role involves following established recipes and plating guides, maintaining a neat and orderly station, and contributing to a positive work environment.

Responsibilities

  • Maintains kitchen staffing levels for optimal performance
  • Represents the Executive Chef in his/her absence
  • Administers and ensures adherence to departmental guidelines, policies, and procedures
  • Supervises/performs kitchen opening and closing operations
  • Orders raw food ingredients necessary to prepare all items on the menu
  • Ensures proper storage of raw food ingredients
  • Monitors food preparation, production, holding, and storage operations
  • Performs frequent inspections of kitchen equipment
  • Reports all equipment maintenance needs to engineering
  • Interviews, selects, trains, appraises, coaches, counsels, and disciplines departmental employees
  • Reviews daily payroll report and controls labor costs
  • Communicates with department employees about daily activities and upcoming events
  • Evaluates employee performance and establishes training needs
  • Conducts meetings with department employees
  • Communicates with other departments within the hotel
  • Attends required hotel meetings and training sessions
  • Remains current with hotel information and changes
  • Complies with hotel standards, policies, and rules
  • Maintains cleanliness and excellent condition of equipment and work area
  • Works flexible schedules including weekends and holidays

Requirements

  • A culinary degree from a recognized culinary institute or equivalent experience
  • Three to five years experience in quality food production
  • One plus years supervisory experience in quality food production
  • Excellent culinary skills and knowledge of food production techniques
  • Thorough knowledge and understanding of kitchen equipment use and operation
  • Outstanding management, organizational, communication, and leadership skills
  • Ability to speak, read, and write English
  • Ability to work flexible schedule
  • Ability to comply with safety regulations and hotel standards
  • Ability to remain current with hotel information and changes
  • Ability to comply with hotel uniform and grooming standards

Pay

The salary range for this position is $X - $Y per hour, depending on experience and qualifications.

Schedule

The schedule for this position is typically Monday through Friday, with occasional weekend and holiday shifts as needed.
