Reports to: Steward Manager, Food and Beverage Director & Executive Chef

About the Role

Responsible for cleanliness and sanitation of all food and beverage related areas in accordance with company, industry, and governmental guidelines. Oversees and supervises the Stewarding staff to ensure responsibilities are adhered to and carried out to achieve maximum department efficiency and profitability. Possesses full knowledge and training specific to company, industry, and governmental guidelines concerning chemicals and sanitation. Supports Culinary, Banquet, Restaurant, and Bar outlet management teams. Oversees the entire operation for Food & Beverage Division sanitation and ware-washing. Performs as Executive Steward in their absence.

Responsibilities

  • Ensure all Food & Beverage outlet areas are staffed according to business demands to maintain optimal cleanliness and sanitation per company, industry, and governmental guidelines.
  • Report any safety or sanitation violations to the Director of Food & Beverage.
  • Schedule and oversee deep cleaning, hood cleaning, and pest control for all Food & Beverage outlet areas.
  • Coordinate return and transport of used china, glass, silver, and linen for all Banquet events.
  • Support Stewarding procedures for beverage outlets on the casino floor.
  • Coordinate transport of requisitioned and used linen for all Food & Beverage Restaurant outlets.
  • Interview, hire, and train Stewarding staff.
  • Conduct coaching and "Discipline Without Punishment" as needed.
  • Ensure compliance with company Performance Appraisals and conduct reviews with Stewarding staff.
  • Conduct shift, daily, and weekly staff meetings to update Stewarding staff on resort-wide information (e.g., team member activities, safety issues, general updates).
  • Prepare weekly staff schedules to maximize efficiency and profitability.
  • Assist all team members in the Food & Beverage Division as needed.
  • Approve production levels, requisitions, and payroll on a daily basis or as needed.
  • Approve and sign paperwork related to IMGR&C Attendance and Punctuality Policy and leave requests.
  • Log daily activities, changes, or concerns affecting the Stewarding Department.
  • Perform duties of Executive Steward in their absence.
  • Adhere to all regulatory, departmental, and casino policies and procedures.
  • Perform other duties as required by top management.

Supervisory Responsibilities

  • Oversee and supervise Lead Stewards, Stewards, and Overnight Stewards.
  • Carry out responsibilities in accordance with IMGR&C policies, procedures, and applicable laws.
  • Interview, hire, train, plan, assign, and direct work for the Stewarding Department.
  • Develop and conduct performance appraisals, rewarding and disciplining Stewarding team members.
  • Address Stewarding team member concerns and conflicts of job interest.

    • Required to work all Marketing Special Events and Concerts.

    • Ask questions to better understand expectations.
    • Report all guest complaints, compliments, and situations where resort grounds or equipment do not meet IMGR&C standards to a Supervisor or Manager.

  • Must be able to use handheld communication devices.
  • Occasionally lift and/or move up to 50 pounds.
  • Able to stand for several hours at a time.
