Job Summary
The Premium Culinary Lead Cook is responsible for prepping, preparing, and cooking products according to recipe specifications and food safety and sanitation guidelines. The individual should have a reasonable knowledge base of fundamentals of the kitchen, including knife skills and organization.
Key Responsibilities
- May oversee the cooking activities of food service associates as assigned by Food Service Director.
- Prepares various entrees and menu items following established recipes.
- Operates and cleans equipment after each use.
- Performs scheduled routine cleaning.
- Stores, labels and dates food items according to policy.
- Helps maintain organized storage of dry goods and refrigerated and frozen products.
- Fulfills HACCP guidelines to ensure quality and safety of food supply.
- Complies with federal, state and local health and sanitation regulations and department sanitation procedures.
- Maintains accurate daily production records and completes all required documentation, reports, and logs as assigned.
- Reports issues to management.
- Knows menu items specific to position.
- Possess fundamental skills of the kitchen, including but not limited to, seasoning, knife skills and organization.
- Understands and follows production guidelines and location appearance guidelines.
- Absorbs a sense of urgency and provides friendly, efficient service to teammates and guests.
- Practices proper product control and handling of all inventory and equipment.
- Adheres to Levy guidelines as stated in team member training manual and employee handbook.
- Helps fellow team members whenever necessary.
- Displays a positive attitude toward teammates, managers and other groups.
- Employs good safety and sanitation practices.
- Thoroughly completes all set-up and breakdown responsibilities.
- Performs other duties as assigned.
Job Duties
- At least up to seven (7) years of culinary experience.
- Be punctual, reliable and available for scheduled shifts, including nights, weekends, and holidays on event basis.
- Adapt quickly to fast-paced, high-volume environments.
- Demonstrate physical stamina and agility required to be mobile for long periods throughout the day and stand for duration of entire shift.
- Able to obtain and maintain required work cards including SNHD Health Card, ServSafe Alcohol Card, Non-Gaming Card.
- Able to effectively communicate in English in written and oral form.
- Able to stand, walk, stoop, kneel, crouch and bend.
- Lift, push pull up to 50 lbs.
