Responsibilities

  • Prepares pizza dough, sauces, and toppings according to recipes and quality standards to be served in a timely manner.
  • Maintains work area and cooking equipment in proper and sanitary order.
  • Assembles and cooks pizzas using oven, ensuring proper timing and temperature control.
  • Prepares and plates pizza to order in accordance with approved recipes.
  • Covers, dates, labels, and stores food items and ingredients during the scheduled shift.
  • Supplies plated starches, vegetables and miscellaneous accompaniments to hotline and receives plates from hotline for finishing with sauces and garnishes.
  • Seasons all food items.
  • Communicates with expeditor to ensure smooth transition of finished plates to front of house.
  • Maintains food quality, freshness and presentation before serving.
  • Follows portion control and minimizes food waste.
  • Responsible for complete setup of mise en place for all menu and related special items ten minutes prior to service.
  • Uses advanced knife skills to produce brunois, macedoine cuts, etc.
  • Adheres to proper rotation and sanitation standards at all times.
  • Properly closes and turns over work area at the end of shift, assuring proper storage and minimal waste.

Qualifications

  • One-year certificate from college or technical school; or three to six months related experience and/or training; or equivalent combination of education and experience.
  • Ability to read and interpret documents such as safety rules, recipes, operating and maintenance instructions, and procedure manuals.
  • Ability to write routine reports and correspondence.
  • Ability to speak effectively in English to customers, management, and employees of organization.
  • Ability to add, subtract, multiply and divide.
  • Ability to calculate figures and amounts such as discounts, proportions, percentages and volume.
  • Must obtain and maintain a current San Diego County Food Handlers Card.

Physical Demands

  • Frequent exposure to wet and/or humid conditions, extreme cold, and extreme heat.
  • Frequent standing; walking; using hands to finger, handle, or feel objects, tools, or controls.
  • Frequent sitting; reaching with hands and arms; climbing or balancing; stooping, kneeling, crouching, or crawling.
  • Lifting and/or moving up to 10 pounds, frequently lifting and/or moving up to 25 pounds, and occasionally lifting and/or moving up to 50 pounds.
  • Close vision, color vision, peripheral vision, depth perception, and the ability to adjust focus.

Working Conditions

  • Frequent exposure to high, precarious places and in outside weather conditions.
  • Frequent exposure to fumes or airborne particles, toxic or caustic chemicals, and risk of electrical shock.
  • Moderate to loud noise levels.
  • Employees are required to perform all tasks as safely as possible and to adhere to the applicable safety procedures.

Scheduling

  • Must be available to work weekends and holidays.
  • The company operates seven days a week, 24 hours a day.
  • Shifts will generally be rotated as much as possible to be fair to everyone.
  • It may be necessary to move you from your accustomed shift if business or task assignments demand (i.e. holidays, weekends, and high-volume business periods).
  • Number of hours worked may vary based on business needs.
