Responsibilities
- Implements and enforces all health and sanitation policies
- Prepares and orders all items for all menus, creates order sheets and inventory systems to ensure proper stock levels
- Sets up and cleans all equipment and china required for events and restaurants
- Supports on creation of a weekly schedule for all pastry Associates, managing payroll
- Supports and monitors execution and delivery of the amenity program for the hotel
- Attends BEO meetings, in absence of pastry chef, communicates information to pastry department, oversees pastry production flow and adjusts in order to adhere to control procedures for cost and quality
- Maintains proper receiving, storage (including temperature setting) and rotation of food products to comply with Health Department regulations
- Ensures the department abides by all safety and sanitation policies
- Checks to see that all equipment in the kitchen is clean and in proper working condition, reviews daily cleanliness practices with culinary team and keeps up with daily cleaning schedule
- Ensures the department abides by all safety and sanitation policies
- Monitors to ensure proper receiving, storage (including temperature setting) and rotation of food products so as to comply with Health Department regulations, including coverage, labeling, dating, and placing items in proper containers of kitchen and service
- Performs additional duties as assigned that may be outside the scope of duties, based on business needs
Requirements
- A minimum of two years of previous pastry experience preferred
- Knowledge of pastry
- Ability to work a flexible schedule including weekends and holidays
- Luxury hotel experience, a plus

Physical Requirements
- Grasping, holding, sitting, walking, repetitive motions, bending over
- Ability to stand and exercise mobility for extended periods of time during your scheduled shift
- Ability to lift and carry up to 50 pounds regularly and for extended periods during the shift
- Ability to push and pull food serving equipment and carts weighing up to 200 pounds on a semi - regular basis
