About the Role
The Pastry Cook III will work in all areas of the pastry and bake shop environment, receiving guidance from the Pastry Chef and management team. This role offers an opportunity to gain and advance knowledge in various aspects of patisserie, including knife skills, buffet and banquet service, menu planning, ice creams, sorbets, bread baking, chocolate work, and plate design.
Responsibilities
- Maintains dessert station mise en place according to Chef’s specifications
- Prepares all recipes under supervision as required for daily service
- Assists Pastry Chef, Banquet Chef, and Restaurant Chef in plating
- Maintains station cleanliness during shift
- Completes daily production list by shift end
- Cleans station at shift end
- Assists in organizing kitchen items, including dry goods, equipment, storage containers, and cleaning supplies
- Ensures proper rotation and organization of all food deliveries
- Completes tasks and projects delegated by the manager
- Assists other departments as needed based on business volumes and staff levels
Qualifications
- Culinary Certificate or Associate Degree in Pastry Arts preferred
- Minimum of 1 year of experience as a pastry cook in a luxury hotel or fine dining environment highly preferred
- 2-3 years of experience in pastry work required
Skills
- Proficient written and verbal communication in English; Spanish a plus
- Knowledge of cooking techniques including baking, broiling, grilling, sautéing, roasting, and blanching
- Understanding of food handling, safety, and restaurant guidelines
- Knowledge of simple sauces and dressings
- Excellent time management skills
- Strong focus on precision and detail for consistent, high-quality pastry presentation
- Ability to work under stress and adapt to changes in processes, customer flow, and tasks
- Positive and helpful customer engagement skills
- Collaborative team player
- Ability to read recipes and follow instructions
Work Environment & Physical Demands
- Ability to reach, crouch, kneel, stand, walk, or be on feet for extended periods
- Regularly works in wet, hot, and humid conditions
- May walk on slippery and uneven surfaces
- Occasionally lifts, pushes, or pulls up to 50 lbs. individually or with assistance
