Duties And Responsibilities
- Prepare plated desserts' components, fillings, sauces, and specialty items, according to the recipe and/or chef's instructions.
- Measure and mix ingredients appropriately while following all proper procedures.
- Adjust temperatures and properly wrap and label all finished products, as required.
- Assist the Executive Pastry Chef in setting up tastings.
- Maintain and update recipe books.
- Determine par levels needed for weekly production.
- Work with the Pantry to ensure proper plating and product storage.
- Prepare special events and holiday desserts, as requested.
- Assist with recipe creations, as requested.
Basic Expectations
- Clean and properly store all applicable equipment and tools.
- Maintain clean and organized work areas, including all pastry equipment, cooler, freezer, dry storage, and other applicable work areas.
- Keep product in stock and on par, as required.
- Properly store all products based on health code regulations.
- Maintain a professional image with appropriate chef attire, hat, and shoes.
- Wear gloves when handling products.
Knowledge, Skills, And Abilities
- Culinary degree or equivalent experience.
- Basic knowledge of pastry techniques, measurements, and recipes required.
- One to two years experience owning pastry preparation.
- Self-starter, takes initiative, able to work under direct and indirect supervision.
- Efficient multi-tasking.
- Creative, eye for detail.
- Organized.
- Dependable, reliable, punctual.
Physical Requirements
- Constant standing and walking.
- Frequent stooping, kneeling, and crawling.
- Frequent ascending or descending of ladders, stairs, and/or ramps.
- Must be able to stand and exert well-paced mobility for up to 8 hours per shift.
- Frequent, continual, intermittent flexing and rotation of the spine, elbows, and wrists.
- Must be able to lift up to 20 lbs on a regular and continuing basis.
- Frequent pushing, pulling, lifting, or carrying up to 50 lbs, i.e., full racks of dishes, etc.
- Constant talking, expressing, or exchanging ideas by means of spoken words.
