Major Duties And Responsibilities Load and unload seven smokehousesSet electrical controlling devices for time and temperature according to product being smokedMonitor cooking process, checking product every two hoursRemove product when appropriate shrinkage has been achieved according to product standardsMove product to tempering room for coolingDocument temperature and actual ambient air temperature during every check and upon completion of cooking cycleDip nuggets and prepare for packagingClean and sanitize smokehouses and cooking racksKeep work area clean and organizedFollow GMP/HAACP proceduresAssist with other tasks as assigned Qualifications Knowledge, Skills and Abilities: Knowledge of general smokehouse operating practices and proceduresDetailed-orientedIntermediate level math and reading skillsStrong communication skillsAbility to work independentlyAbility to neatly and accurately complete paperwork
