Lead Sanitor

About the role

White Castle is seeking a Lead Sanitor to direct, train, and work with sanitors to maintain a clean and pest-free facility compliant with FDA regulations. This role involves scheduling sanitation duties, performing food plant inspections, ensuring quality assurance, safety, GMP compliance, and training sanitors and QA technicians. The Lead Sanitor will also fill in as an operator during breaks, lunches, or team member shortages.

Schedule

• 1st shift: Monday - Friday, 6:00 AM - 2:00 PM
• 3rd shift: Sunday - Thursday, 10:00 PM - 6:00 AM

Requirements

• High School Diploma or GED required
• Previous training and experience in the baking industry (preferred)
• Good interpersonal and human relations skills
• Knowledge, training, and experience with production, sanitation, quality, and safety
• Good verbal communication skills and ability to give clear instructions
• Understanding of HACCP, SSOP, GMPs, and FDA regulations
• Proficiency with computers (Microsoft Word, Excel, Outlook, ERP/WMS software)
• Aptitude to complete AIB course and AIB Principles in Baking if needed

Responsibilities

• Schedule, direct, and organize sanitation duties
• Train sanitors in equipment and factory clean-up procedures
• Ensure documentation is FDA and AIB compliant
• Maintain sanitation supplies inventory control
• Operate machinery (mixer, extruder, packaging machine, fork truck)
• Perform quality checks (e.g., final checker for dough balls, excessive flour in pans)
• Palletize and store packaged product for shipment
• Sort and reuse corrugated cartons
• Check and set equipment (e.g., proof box, oven)
• Work efficiently in any production line position
• Maintain company safety rules, GMPs, SQF, and HACCP program requirements
• Load trucks and receive raw materials
• Perform housekeeping duties as needed
• Attend training classes or seminars as recommended by management
• Comply with incident reporting policies and procedures
• Ensure adherence to plant security and safety policies
• Communicate effectively with all levels of the organization
• Be flexible to work overtime, weekends, and holidays as needed

Physical Requirements

• Ability to bend, turn, twist, climb, and stoop
• Occasional lifting up to 60 lbs.
• Work in environments with flour dust, extreme temperatures, wet conditions, reduced visibility, and exposure to chemicals
• Work in confined spaces and at elevated heights
• Wear safety gear (e.g., safety glasses)
• Frequent standing and walking
• Ability to hear, comprehend, and respond professionally to co-workers

$29.74 per hour
