As a member of Relais & Châteaux, we offer unique educational externship opportunities to culinary students.

About the role

Culinary students from accredited institutions are invited to participate in our externship program, which lasts for three months or as per the culinary program's requirements. During this time, students will gain hands-on experience in the kitchen, learning essential functions as part of the culinary brigade under the guidance of culinary management. They will also develop their culinary skills through various tasks and challenges.

Responsibilities

  • Daily prep as directed by culinary management team
  • Aiding in organization and receiving as needed
  • Daily juicing and execution of cold side breakfast for in-house guests
  • Setting up station for service
  • Accurately following and executing recipes for assigned station
  • Thoroughly breaking down station at the end of shift
  • Assisting with employee meal
  • Working with the banquet team for on-site special events
  • Cleaning and general sanitation of all BOH areas daily with the culinary team
  • Performing additional tasks as assigned based on capability and chef discretion

Requirements

  • Enrollment in culinary school or culinary education equivalent
  • Fundamental skills in all basic cooking techniques and execution of knife cuts
  • A growing sense of flavor development and ability to season foods properly
  • ServeSafe certification
  • Previous culinary experience (desirable)
  • Bilingual in Spanish and English (desirable)
  • Desire to learn and grow in a professional kitchen setting
  • Ability to take and follow directions from other cooks and culinary managers
  • Quick and efficient work ethic
  • Strong teamwork skills

Qualifications

  • Physical demands: Ability to lift 50 lbs, stand for 8-10 hours consistently, and availability for extended workweeks
