About the role

The Food Service Worker Lead at Charles E. Bill Johnson Correctional Center supervises inmates to ensure that meal and food items are prepared in accordance with production plans. This role involves training workers in methods of performing duties, assigning and coordinating work to promote operational efficiency, maintaining facility sanitation, and ensuring personal safety by conforming to all standards and regulations. Essential functions may vary by location based on client requirements and business needs.

Responsibilities

  • Lead and assist in the preparation of food items for the day, including dating products.
  • Coordinate and assist in setting up and breaking down stations as designated by the manager.
  • Cook and prepare foods according to recipes and directions, ensuring accurate portions.
  • Maintain daily temperature logs and take samples of all food items before serving.
  • Alert management and remove food items that do not meet quality expectations.
  • Complete opening and closing station checklists.
  • Greet customers, address service quality inquiries, and handle complaints with a positive attitude.
  • Maintain a clean work station, including floors, equipment, walls, refrigerators, and meat blocks.
  • Ensure all work areas and serving utensils are cleaned and sanitized.
  • Dispose of waste from the service line accurately.
  • Transfer supplies and equipment between storage and work areas.
  • Assist with daily safety observations and report hazards to management immediately.
  • Cross-train in various areas as needed, including concessions, catering, and special events.
  • Perform tasks as requested by management on a weekly, bi-weekly, or monthly basis.
  • Lead and advise employees on the line to ensure timely and effective customer service.
  • Request support from utility workers for sanitation issues as needed.

Requirements

  • Ability to work in a team environment.
  • Serve Safe Certification.
  • Ability to follow detailed written and verbal instructions.
  • Food service experience preferred.
  • Frequent lifting and transporting of hot food items.
  • Ability to work in a kitchen environment with heated equipment, steam, loud noise, chemicals, and other at-risk conditions.

Qualifications

This role may have physical demands including lifting, bending, pushing, pulling, and extended walking or standing. It may also require uniforms and/or usage of Personal Protective Equipment (PPE).
